Ingredients:
- 2 cups ripe mango, peeled, pitted, and diced
- 1 cup red onion, finely chopped
- 1/2 cup red bell pepper, diced
- 1/4 cup raisins (optional)
- 1 cup white sugar
- 1/2 cup apple cider vinegar
- 1 teaspoon ginger, grated
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1/2 teaspoon red chilli flakes (adjust to taste)
- A pinch of salt

Instructions:
1: Prep the Ingredients
- Peel, pit, and dice the ripe mango into bite-sized pieces.
- Finely chop the red onion and dice the red bell pepper.
2: Combine and Cook
- In a saucepan, combine the diced mango, red onion, red bell pepper, and raisins (if using).
- Add sugar, apple cider vinegar, grated ginger, mustard seeds, cumin seeds, red chilli flakes, and a pinch of salt.

3: Simmer to Perfection
- Bring the mixture to a gentle boil over medium heat, stirring to dissolve the sugar.
- Once it boils, reduce the heat and let it simmer uncovered for 30-40 minutes or until the chutney thickens.
4: Test for Consistency
- To check the consistency, place a spoonful of chutney on a cold plate. If it wrinkles when you push it with your finger, it’s ready.
- If not, continue simmering and repeat the test.
5: Cool and Store
- Remove the saucepan from heat and let the chutney cool.
- Transfer the chutney to sterilised jars and store in the refrigerator.
